A taste of Pingtan:Fine Noodle

Purely white, thin as hair, soft and extendable, Fine Noodle, or Longevity Noodle, is a traditional snack for Han nationality in Fujian Province.

This kind of noodle is easy to cook. Simply drop the noodle in a boiling water pot, then add Porphyra, meat and other ingredients. The thick broth intertwining pulpy but chewy noodles makes a classic Pingtan flavor featuring delicacy and aroma.

Rencuo Village in the southern Pingtan’s Aodong Town is the birthplace of the Fine Noodle of Pingtan. To this day, a few villagers are still living on producing this. Ren Huoqin is among them. Year after year, Ren and his wife repeat their work from dawn to dusk every day to run their sweet undertaking together.
